We’re happy to share it here so you can recreate these fresh, zesty, and slightly chewy cookies in your own kitchen.
Ingredients (Makes approx. 20–25 cookies)

175 g butter (room temperature)

137.5 g granulated sugar

125 g lightbrown sugar

62.5 g egg (about 1 Large egg)

265 g flour
-
2 g salt
-
6 g baking soda

Zest and juice of 2 limes
-
200 g dried cranberries

Instructions
1. Prepare the Cranberries
Start by rinsing the dried cranberries thoroughly. Let them drain for about 2 hours. This step helps soften them slightly and improves their texture in the cookies.
2. Cream the Butter and Sugars
In a mixing bowl, combine the butter, granulated sugar, and lightbrown sugar. Mix until you achieve a smooth, creamy consistency.
3. Add the Egg
Slowly add the egg to the mixture and continue mixing until everything is fully incorporated.
4. Form the Dough
Add the flour, salt, and baking soda. Mix until the ingredients come together into a smooth dough ball.
5. Add Lime Zest and Juice
Zest the limes first, then juice them. Add both the zest and juice to the dough and mix until evenly distributed. This is where the cookies get their fresh, citrusy flavor.
6. Fold in the Cranberries
Add the drained cranberries and mix gently until they are evenly spread throughout the dough.
7. Shape the Cookies
Pack the dough and put it in the fridge for about 2 hours (not a must, but it makes forming them easier and the taste a bit richer). Afterwards, form dough balls of about 50 g each. Place them on a baking tray and gently press them flat.
Important: Leave plenty of space between each cookie—they will spread and become about 4 times larger while baking.
8. Bake
Preheat your oven to 180°C (top and bottom heat).
Bake the cookies for 10–15 minutes, or until they turn a beautiful golden brown. Keep an eye on them—every oven is slightly different.
9. Cool Before Serving
Let the cookies cool for at least 10 minutes before eating. This helps them set and enhances their texture.
